Stuffed Squash with Sausage, Apples, and Cranberries

  1. Preheat the oven to 425°F (220°C). 
  2. Remove the seeds from the squash and place it on a baking sheet. Drizzle with olive oil, season with salt & pepper, and bake for 40-45 minutes. 
  3. In a skillet over medium heat, add a drizzle of olive oil. Add the onions, oregano, and rosemary. Season with salt and cook for 2-3 minutes. 
  4. Add the apples and cranberries. Cook for another 2-3 minutes. 
  5. Add the sausage meat, breaking it up into pieces, and cook for 4-5 minutes.
