Stuffed Squash with Sausage, Apples, and Cranberries

Ingredients
- 1 spaghetti squash, halved
- La Belle Excuse Extra Virgin Green Olive Oil
- Meat from 4 sweet Italian sausages
- 1 apple, diced
- 60 ml (1/4 cup) dried cranberries
- 10 ml (2 tsp) La Belle Excuse Mountain Oregano Dried on Stem
- 10 ml (2 tsp) fresh rosemary, chopped
- 120 ml (1/2 cup) crème fraîche or sour cream
- 50 ml (2 cups) shredded Havarti cheese
Steps
- Preheat the oven to 425°F (220°C).
- Remove the seeds from the squash and place it on a baking sheet. Drizzle with olive oil, season with salt & pepper, and bake for 40-45 minutes.
- In a skillet over medium heat, add a drizzle of olive oil. Add the onions, oregano, and rosemary. Season with salt and cook for 2-3 minutes.
- Add the apples and cranberries. Cook for another 2-3 minutes.
- Add the sausage meat, breaking it up into pieces, and cook for 4-5 minutes.
