Giant latke with smoked salmon

Ingredients
- 800 g russet potatoes, grated
- 1 yellow onion, grated
- 3 eggs
- 60 ml (1/4 cup) La Belle Excuse Extra Virgin Green Olive Oil
- 1/2 red onion, cut into strips
- 60 ml (1/4 cup) La Belle Excuse Red Wine Vinegar
- 120 ml (1/2 cup) water
- 15 ml (1 tablespoon) sugar
- 150 g smoked salmon, sliced
- 120 ml (1/2 cup) crème fraîche
- Fresh dill
- A few lemon wedges
Steps
- Preheat oven to 475°F.
- Place potatoes in a clean kitchen towel. Wring out as much water as possible.
- In a bowl, combine potatoes, yellow onion and one egg. Season with salt and pepper.
- Add olive oil to frying pan. Add potato mixture and spread evenly. Drizzle with olive oil.
- Bake for 30-35 minutes.
- Bring a pan of water to a boil. Add the two eggs and cook for 7-8 minutes. Remove from the pan and plunge into a bowl of iced water before removing the shells.
- In a bowl, combine the red wine vinegar, water and sugar. Add a pinch of salt and mix well. Heat in microwave for approx. 1 minute. Add the red onions and marinate for a few minutes.
- Garnish the latke with arugula, smoked salmon, pickled onions, eggs, crème fraîche and dill. Serve with a drizzle of olive oil and lemon wedges.
