La Belle Excuse Balsamic Vinaigrette
Serves: about 250 ml (1 cup)

Ingredients
- 1 small French shallot, minced
- 5 ml (1 teaspoon) La Belle Excuse Roasted Garlic and White Balsamic Mustard
- 45 ml (1/3 cup) choice of La Belle Excuse balsamic vinegar: white, traditional, lemon or raspberry — Trust yourself, you can’t go wrong!
- 125 ml (1/2 cup) La Belle Excuse extra virgin green olive oil
- La Belle Excuse Fleur de sel to taste
- Freshly ground pepper to taste
Steps
- Put all ingredients in a Mason jar, shake well and refrigerate until ready to serve.
Some tips to spruce up your salad:
- Support your local farmers and diversify your lettuce choices: curled, romaine, escarole, oak leaves, iceberg, lamb’s lettuce, watercress, radicchio, arugula, endives, sprouts. Tender, crispy, sweet, bitter or peppery... the possibilities are endless!
- For texture, add some homemade croutons or grilled pita chips, roasted nuts, toasted pumpkin or sesame seeds.
- Introduce local cheeses to add creaminess and extra flavour. Whether fresh or aged, soft, firm or even blue-veined, cheese options are endless.
- Spruce up your salad with a splash of colour from the array of tomatoes at the market, some apple or pear slices, cucumber, radishes and even zucchini ribbons.
- Dried fruits such as cranberries, raisins, dates and figs are a great addition for those with a sweet tooth.
- Elevate with some green onion, chives or thinly sliced red onion.
- And above all, remember to add fresh seasonal herbs!
