La Belle Excuse Balsamic Vinaigrette

Serves: about 250 ml (1 cup)

  1. Put all ingredients in a Mason jar, shake well and refrigerate until ready to serve. 


Some tips to spruce up your salad: 

  1. Support your local farmers and diversify your lettuce choices: curled, romaine, escarole, oak leaves, iceberg, lamb’s lettuce, watercress, radicchio, arugula, endives, sprouts. Tender, crispy, sweet, bitter or peppery... the possibilities are endless! 
  2. For texture, add some homemade croutons or grilled pita chips, roasted nuts, toasted pumpkin or sesame seeds. 
  3. Introduce local cheeses to add creaminess and extra flavour. Whether fresh or aged, soft, firm or even blue-veined, cheese options are endless. 
  4. Spruce up your salad with a splash of colour from the array of tomatoes at the market, some apple or pear slices, cucumber, radishes and even zucchini ribbons. 
  5. Dried fruits such as cranberries, raisins, dates and figs are a great addition for those with a sweet tooth. 
  6. Elevate with some green onion, chives or thinly sliced red onion. 
  7. And above all, remember to add fresh seasonal herbs!
