Pork Souvlaki:

  1. In a large bowl, combine lemon zest, lemon juice, minced garlic, dried oregano, olive oil, salt, and pepper. Mix well to combine.
  2. Add the cubed pork tenderloin to the marinade, ensuring all pieces are evenly coated. Cover the bowl and refrigerate for at least 1 hour, or overnight for best flavor.
  3. Preheat the grill to medium-high heat. Thread the marinated pork onto the soaked wooden skewers.
  4. Grill the skewers over charcoal for 5-6 minutes per side, or until the pork is cooked through and slightly charred on the edges.
  5. Once cooked, remove the skewers from the grill and let them rest for a few minutes before serving.

Single Fried French Fries:

  1. Rinse the cut potatoes under cold water to remove excess starch. Pat them dry with paper towels.
  2. In a large skillet, heat olive oil over medium-high heat until hot but not smoking.
  3. Carefully add the potato fries to the hot oil in batches, ensuring they are not overcrowded. Fry for 5-6 minutes per batch, or until golden brown and crispy.
  4. Once cooked, remove the fries from the oil using a slotted spoon and transfer them to a paper towel-lined plate to drain any excess oil. Season with salt while still hot.

To Serve:

  1. Warm the pita bread on the grill or in a toaster oven.
  2. Place the grilled pork skewers on top of the warm pita bread.
  3. Top the skewers with thinly sliced red onions, tomatoes, and a dollop of tzatziki.
  4. Serve the souvlaki alongside the single fried French fries.
