Pork Souvlaki by Laurent Dagenais

Ingredients
- Pita bread
- Red onion, thinly sliced
- Tomatoes, diced, to serve.
Pork Souvlaki:
- 2 pork tenderloins, cut into cubes
- Zest and juice of 2 lemons
- 4 cloves garlic, minced
- 10 ml (2 teaspoons) Mountain Oregano dried on stem
- 60 ml (1/4 cup) Olive Oil Laurent Dagenais X La Belle Excuse
- Mediterranean Fleur de sel and pepper, to taste
- Wooden skewers, soaked in water for 30 minutes

Single Fried French Fries:
- 2 large potatoes, peeled and cut into fries
- Olive Oil Laurent Dagenais X La Belle Excuse, for frying
- Mediterranean Fleur de sel, to taste
Steps
Pork Souvlaki:
- In a large bowl, combine lemon zest, lemon juice, minced garlic, dried oregano, olive oil, salt, and pepper. Mix well to combine.
- Add the cubed pork tenderloin to the marinade, ensuring all pieces are evenly coated. Cover the bowl and refrigerate for at least 1 hour, or overnight for best flavor.
- Preheat the grill to medium-high heat. Thread the marinated pork onto the soaked wooden skewers.
- Grill the skewers over charcoal for 5-6 minutes per side, or until the pork is cooked through and slightly charred on the edges.
- Once cooked, remove the skewers from the grill and let them rest for a few minutes before serving.

Single Fried French Fries:
- Rinse the cut potatoes under cold water to remove excess starch. Pat them dry with paper towels.
- In a large skillet, heat olive oil over medium-high heat until hot but not smoking.
- Carefully add the potato fries to the hot oil in batches, ensuring they are not overcrowded. Fry for 5-6 minutes per batch, or until golden brown and crispy.
- Once cooked, remove the fries from the oil using a slotted spoon and transfer them to a paper towel-lined plate to drain any excess oil. Season with salt while still hot.
To Serve:
- Warm the pita bread on the grill or in a toaster oven.
- Place the grilled pork skewers on top of the warm pita bread.
- Top the skewers with thinly sliced red onions, tomatoes, and a dollop of tzatziki.
- Serve the souvlaki alongside the single fried French fries.
