Raspberry & Thyme Shrub
Serves: 1 L (8–10 glasses)

Ingredients
- 500 ml (2 cups) water
- 250 ml (1 cup) sugar
- A few sprigs fresh thyme
- 250 ml (1 cup) La Belle Excuse Raspberry White Balsamic Vinegar
- 250 ml (1 cup) frozen raspberries
Steps
- In a saucepan, bring the water and sugar to a boil, stirring until the sugar has completely dissolved.
- Add the thyme, reduce the heat, and simmer for 5 minutes.
- Remove from the heat and let steep for 10 minutes.
- Remove the thyme sprigs, then add the frozen raspberries and the raspberry white balsamic vinegar.
- Using an immersion blender, blend until smooth. Strain through a fine-mesh sieve if desired.
To Serve
- Fill a glass with ice.
- Pour in about one-third shrub, then top with sparkling water.
- Stir gently and serve chilled.
