Olive Oil Triple Chocolate Cookies

Ingredients
- 75 g (1/3 cup) La Belle Excuse Extra Virgin Green Olive Oil
- 80 g (1/3 cup + 1 tbsp) brown sugar
- 60 g (1/4 cup + 2 tsp) white sugar
- 1 egg
- 10 ml (2 tsp) vanilla extract
- 160 g (1 1/4 cups) all-purpose flour
- 35 g (1/3 cup) cocoa powder
- 2.5 ml (1/2 tsp) baking soda
- 2.5 ml (1/2 tsp) La Belle Excuse Mediterranean Fleur de Sel
- 100 g (1/2 cup) dark chocolate, chopped
- 100 g (1/2 cup) white chocolate, chopped
Steps
- Preheat the oven to 350°F.
- In a bowl, combine the olive oil, brown sugar, and white sugar. Whisk well for 1-2 minutes. Add the egg and vanilla extract, then whisk for another 1-2 minutes.
- In a separate bowl, combine the flour, cocoa powder, baking soda, and salt.
- Gradually fold the dry ingredients into the wet mixture. Mix well, then add the dark and white chocolate pieces.
- Shape the dough into 10-12 balls, depending on the desired size. Place them on a baking sheet lined with parchment paper.
- Bake for 12-14 minutes. Once out of the oven, sprinkle the cookies with a pinch of salt.
